Okay. During the Fall season, I love enjoying all the different varieties of squash, especially spaghetti squash. Usually, I just add some Prego sauce to my cooked spaghetti squash, but tonight, I decided to try something new. Spaghetti Squash Shrimp Alfredo….It was ssssooo good. I had to share!
First, I baked a spaghetti squash.
Now, I used to take the effort to cut through the squash before baking, but I have since taken a much lazier route. Preheat your oven to 350 degrees. Pierce the squash all around and put in the oven on a baking sheet for 60-90 minutes, turning every 30 minutes. This technique also works for butternut squash. When you can easily pierce the skin, take the squash out and cut open. Spoon out all the seeds. Then, take a fork and shred the squash.
Second, Fry up some other veggies
Chop 2 sweet onions and 2 large portobello mushrooms. In a large skillet, melt two tablespoons of butter and a teaspoon of crushed garlic on medium-high heat. Add onions and cook until they start to soften. Then, add mushrooms. When mushrooms are almost cooked completely, add cooked shrimp with one more tablespoon of butter. (I buy frozen cooked shrimp, so I defrosted mine in a bowl of water while the spaghetti squash cooked.)
Third, Combine all the goodness.
In a separate bowl, combine ingredients from skillet and spaghetti squash. Add Alfredo sauce and parmesan cheese. Stir it all up, and it’s done!
Now, I like a little spice in my food, so I added Texas Pete to my bowl. Most of my family does not have this preference, so I don’t put hot sauce in the whole bowl.
Pretty simple, and so delicious!
